Pigs Eatin’ Ribs Jumbo Chili-Cheese Tater Skins

There are three requirements for enjoying the traditional foods of a northern Michigan summer: ice cream, cherries, and barbeque. While Cherry Festival is now past, and ice cream season is waning, you can still count on barbeque to carry right into the fall, and a great place to get your fill of it is Charlevoix’s Pigs Eatin’ Ribs.
        
While it’s a given that Pigs Eatin’ Ribs has delicious ribs (’natch), they’ve got some other smoke-infused goodies as well, all inspired by the Southern-style barbeque that they’ve brought to northern Michigan.
        
One of those savory treats is their Pitmaster’s Chili, a thick stick-to-your-ribs kind of chili with spice, studded with chili beans and smoked meats, and topped with cheddar cheese shreds and onion.
        
Take that chili a step farther with one of their most popular specials: their foodie-friendly Jumbo Chili-Cheese Tater Skins.
        
Pigs Eatin’ Ribs takes baked potato halves, hollows ’em out, and fills them to the brim with the aforementioned Pitmaster’s Chili, plus cheddar cheese, scallions, pickled peppers, and the sauce de résistance: avocado sour cream.
