Mammoth Distilling’s new Bay Harbor Tasting Room, 4181 Main St., is a great place to sit up straight. And that’s exactly what you’ll do when you down a refreshing Vodka Collins ($9) on a hot summer day. Triple distilled, smooth and toothy, Mammoth Vodka (80 proof) gives the classic Mr. Collins two solid legs and a rigid backbone. Fresh lemon juice, simple syrup, and soda round out this classic cocktail, crowned with a rust-hued, dehydrated orange slice. Mammoth’s Vodka Collins is quaffed from a towering Collins glass, filled to the brim with crystal-clear ice cubes. The shaken mixture is then gently poured over the ice column and topped off with a dash of soda water. The first sip’s shocking chill spotlights the vodka’s bracing purity, subtly mellowed by the lemon juice/sugar syrup harmony.
