Polish Countryside Kitchen’s Dill Pickle Soup

We know we’re still on the edge of cozy weather, but it’s always soup season at Polish Countryside Kitchen in Cedar, where the food truck’s Dill Pickle Soup is kind of a big dill. Featuring salt-brined pickles sourced straight from Poland, this hearty Euro-style soup is deliciously simple: diced pickles and brine, sour cream, shredded garden carrots cooked to al dente, dill and marjoram, and, the defining ingredient, scratch-made Mangalitsa pork bone broth, which creates its signature rich and velvety mouthfeel. Served alongside a slice of New Palace Bakery’s (Hamtramck) traditional rye bread with butter, each spoonful is a slurpable dynamic of sour, salty, and savory.
