When Silver Spruce Brewing opened its doors in 2018, the brewery committed itself to making beers that were crisp, clean, simple, and drinkable, a relative rarity in a craft brew world that had become increasingly interested in pushing experimental boundaries. No surprise, then, that Silver Spruce makes some of the most approachable sour beers on the market. While sours are an acquired taste, the Silver Spruce versions—most of them made under the banner of the brewery’s “mixed culture series”—are easy to appreciate. This one, made with Pilsner malt and blackberries, is like a fruity version of the brewery’s most popular beer, the German Pilsner. Tart but not too tart, fruity but not too sweet, oak-aged but not too funky, the Blackberry Wild is the Goldilocks of sour beers: just right.
