You can’t go wrong with an elevated grilled cheese sandwich, and Cheese & Co., a food truck based at The Back Lot in Petoskey, is one of the best in northern Michigan. Many “grown-up” twists on the grilled cheese play around with savory and sweet combos, whether that means adding apples, pears, or even pineapple chunks. We love this one because it offers not only the savory (bacon, white cheddar, and perfectly crisped sourdough bread) and sweet (a slathering of apricot jam) flavors, but because it also throws in a spicy little pop in the form of jalapeño cream cheese. The resulting sandwich delivers a delight in every bite, and had us genuinely considering ordering a second sandwich when the first one was gone.
