Hearty slices of eggplant are breaded and cooked to crispy perfection then served over a bed of fresh pappardelle and marinara. Believe us when we tell you this meal is destined for leftovers—noodles on the stove with some olive oil to undo a night in the fridge and your eggplant in the (toaster) oven to get that cheese nice and bubbly for round two.
